
Beef Enchiladas
A long time ago I shared a chicken enchiladas recipe and today I’m sharing a beef enchilada recipe. It’s so good and perfect for these cold days! I follow the recipe from Gimme Some Oven and I don’t really make any changes to it usually.
For the recipe you’ll need:
- red enchilada sauce
- olive oil
- ground beef
- cumin
- salt & pepper
- onion
- garlic
- diced green chiles
- pinto beans
- flour tortillas
- Mexican blend shredded cheese
First, brown the ground beef in a pan with olive oil and add in the cumin, salt, and pepper. Once the ground beef is browned, remove the beef to a plate and empty some of the oil reserving about a tablespoon. Then, in the same pan sauté the onions for a few minutes before adding in the garlic. After another minute or two add in the green chiles, drained & rinsed pinto beans, and add the ground beef back in.
Next, assemble the enchiladas. Spread some of the enchilada sauce onto the tortillas, fill with some of the beef mixture, sprinkle with cheese, and roll up the enchilada. Place enchiladas in your baking dish, seam side down. Pour remaining sauce over the enchiladas and sprinkle cheese over top.
Bake at 350 for about 20 minutes.
