Paella

Paella is one of my favorite dishes and I love that if you make it yourself you can really make it your own, just like with any dish. After a lot of trial and error over the years, I have it pretty much down. Read on to see step by step photos!

In my paella I use: shrimp, mussels, clams, chicken, chicken broth, sausage, garlic, onions, saffron, peas and short grain rice.

In a paella pan, I pour in uncooked rice, the chicken and sausage. Next, I pour the broth and saffron into the paella pan. Paella pans are very wide and shallow.

Once the broth starts to bubble, I cover it with foil and put it in the oven for about 30 mins. I like putting it in the oven so that it cooks evenly.

After about 30 minutes, I take the pan out and add in the peas and seafood making sure that the mussels will open upwards.

I stick it back in the oven until the seafood is all cooked.

It is so good! And like I said it takes a few tries to get it right and figure out what works for you and your kitchen. Every stove and oven is different so cooking time can vary. I love the colors in this paella, especially the pops of the green from the peas!
