
Spinach & Mushroom Stuffed Chicken
How’s everyone’s week going so far? I can’t believe it’s already Thursday! I’m trying to savor this last 1+ week before I go back to work.
I have a food post for you all today and I filmed it as well for a short less than 2 minute video!
Of course, I also have some pictures for you to walk you through this easy dish.
I diced some tomatoes, cut the spinach into smaller pieces, and cooked and cut up the mushrooms ahead of time.
Put the ingredients inside the chicken breasts and be careful not to overstuff them because then it will be hard to close them up.
Dust them with some flour and pan fry them just to brown the chicken a bit. Flip the chicken to brown the other side before putting the chicken in the oven.
Easy and delicious – just what I like! Just be careful not to eat the toothpicks!

Chicken breast doesn’t take too long to cook so I think I had it in the oven for only about 10 minutes after browning it on the stove. Once it’s cooked you can take it out!
