I head back to work tomorrow (boo) so I’m probably going to be on the hunt for more easy, weeknight meals again soon. One I’ve made a few times is this chili lime shrimp. I found the recipe via Pinterest a few years ago. It’s a really easy recipe!
I follow the recipe and just adjust based on how much shrimp I’m making.
For the recipe you’ll need:
- lime juice
- olive oil
All you have to do is combine all the ingredients, pour over the raw shrimp, and let it marinate for 15 minutes. Then you can grill the shrimp or like me, since I don’t have a grill at my condo, use a griddler.
Easy and delicious meal to make especially on busy days and or weeknights!
