Slow Cooker Boeuf Bourguignon
I love a good slow cooker recipe any time of the year, but especially during the colder/winter months because slow cooker recipes are usually heartier. Last winter I made a slow cooker boeuf bourguignon and it was so good! I didn’t get a chance to share it last winter on here so I’m sharing it now since we are just at the start of the cold weather. I don’t remember which recipe/website I followed when I made this last winter and it’s driving me crazy that I can’t find it saved on my Pinterest or in my bookmarks. This one seems like the closest to what I made except it’s not a slow cooker recipe. This one is a slow cooker recipe, but doesn’t quite follow the photos I have below. So maybe combine the two to make what I did! You can click on the links above for all the details on the recipes, but below I have a series of photos so you can follow along with what I did.
First, you prep all your vegetables and meat (bacon and beef). The recipe asked for a pound of carrots, but I didn’t want that many so I cut down on the amount of carrots. After browning the meat and making the sauce which consists of beef broth, wine, tomato paste, and thyme.
The mushrooms, carrots, thyme, and potatoes go in to the slow cooker first and then you put the beef cubes and sauce in. Aside from cutting down the amount of carrots I put in, the other little change I did was for the sauce. This actually isn’t a change because I kept the ingredients the same. I just used a strainer to pour the sauce in because I didn’t want it to be lumpy.
It came out so good! I garnished it with parsley and ate it with fresh baguette. I definitely want to make this again soon especially after looking at these delicious photos. As mentioned above, I can’t find the exact recipe I used last time, but by looking at my photos I cooked it in the slow cooker on high for 7 hours. If I can’t find the recipe next time I make it I might just combine the two I linked above.
Boeuf bourguignon is so good and definitely a crowd pleaser. I always think of Julia Childs when I hear boeuf bourguignon. Making it in the slow cooker is so easy and you don’t have to constantly watch it on the stove. I highly recommend making it this winter!
